Yesterday we had our youngest son baptized. In pure laziness, we decided to get the lunch we hosted catered by Chipotle. If you have not done this before, do it. Chipotle made it so simplistic and not having to prep food was worth the extra money.
I’m sure if you’ve been to Chipotle before you know that they give you enough in a burrito to feed several people. This is true for their catering too. We ended up with enough leftovers to feed us dinner all week – this is not a problem I am upset about. Unfortunately, we’re Chipotled out.
Every once in a while a genius idea strikes me. I decided to take the left overs and make it into new meals. Today was quesadillas.
They were fabulous. Each quesadilla had corn salsa and mild salsa. I made one with chicken and one with steak. I shredded the meat with our blender. Another win as we rarely use the blender.
The only thing that would have made this better would have been if the kids actually ate dinner. Regardless of what we would have had for dinner, they wouldn’t have ate. They decided today is the perfect day to disagree about every little thing. I suppose you win some, and you lose some.
